Some of you at the Volunteer Appreciation Dinner asked for this recipe.  So here it is...Enjoy!  Lynette...

                       Cinderella Cake

Ingredients:

2 cups sugar

4 eggs

1 cup vegetable oil

2 cups flour

2 teaspoons soda

2 teaspoons cinnamon

1/2 teaspoon salt

2 cups canned pumpkin

Directions:

Beat sugar and eggs until light and well blended.  Add oil slowly as you continue to beat. 

Combine dry ingredients and blend into egg mixture, adding a 1/4 cup at a time.

Add pumpkin and mix well.

Pour into well-greased 9" tube pand and bake at 350 for 55 minutes.

 

                        Coachman's Icing

Combine:

1 - 3oz pkg cream cheese

1 stick butter

Add:

1 lb powdered sugar

1 teaspoon vanilla

Beat until smooth

Tint light orange with food coloring, if desired.  Decorate with curls of shaved baking chocolate, if desired.
